Tip 4: Choose fats wisely
We need a small amount of unsaturated fats daily for vital functions such as formation of hormones. However, a major part of our diet consists of high-risk saturated and trans fats. Therefore, we have to choose fats wisely and eat them in moderation.

09Greek Chicken with Tomatoes, Peppers, Olives, Feta

To make Greek seasoning salt, combine:
1 teaspoons of garlic salt,
1 teaspoons of lemon pepper,
1 teaspoons of oregano, and
1 teaspoons of dried mint.
Ingredients:
4 boneless, skinless chicken breast,cut halves
1 tablespoon flour
2 teaspoon olive oil
1 large onion, sliced lengthwise
1 green pepper, cored, seeded, and sliced lengthwise into strips
3 Roma tomatoes, cut into eighths
3 tablespoons Kalamata olives, chopped
3 tablespoons feta cheese, crumbled 4 tablespoons of water or stock
Directions
Rub chicken with flour and 4 teaspoons of Greek seasoning. Leave in refrigerator to marinate for at least an hour. Heat oil in a large skillet over medium heat and add chicken, saut?ing for about 1 minutes. Add water or stock.
Add onion and tomatoes to skillet and saute until tender, about 2 minutes. Turn the chicken and add bell pepper and cook for another 2 minutes.?
Remove from heat, transfer to serving dish, and sprinkle with olives and feta cheese.Serves 8. Approximate per serving: 210 calories; 9.5 grams of fat
